Easy, Peasy Pie Crust Recipe

So, it’s PI day (3.14) and a snow day. Seems like a good day to bake a pie. For those intimidated by the prospect of making your own crust, here is the most reliable recipe that I’ve found.
2 c. flour
1 tsp. salt
2 tsp. sugar
1/4 c. cold water
1/2 of a whole beaten egg
1&1/2 tsp vinegar
3/4 c. plus 2 Tbsp vegetable shortening
Chill shortening. Mix flour, salt, & sugar. Cut shortening into the flour mixture until it is pea-sized bits. Mix egg and vinegar into the cold water. Mix the egg mixture into the flour mixture with a fork until it forms a ball. Mix it by hand until just mixed. Flatten into a 7 inch disk, wrap in plastic, and chill for at least 1 h (or freeze for later). Split the dough in two and roll it out on wax paper. Put one in a pie pan, add filling, and away you go.
